Rustic Tuscan Tomato Soup

The student loan has yet to come in, prices keep rising and you need to eat something. Unfortunately, there is nothing we can do about the stufi and those rising prices. We can, however, present you with a filling dish for under €2. This week, a rustic Tuscan tomato soup is on the menu. Many ingredients you probably already have at home. It does take a while to make, but fortunately you can do just fine watching a series during preparation. After all, it's not super difficult, but very tasty. Buon appetito! 

INGREDIENTS 

  • Canned tomatoes - 500 grams
  • Chicken stock - 100 millilitres
  • Olive oil - 175 millilitres
  • Stale bread - 150 grams
  • Onion - 100 grams
  • Chili flakes - 2 grams
  • Garlic - 4 cloves
  • Basil - 25 grams
  • Salt
  • Pepper

PREPARATION METHOD:

  • Cut the onions into half rings and put them in a large pan with a little oil.
  • Sweat them gently, without colouring. 
  • Then add some dried chilli flakes and fry for 20 minutes on low heat. Your patience pays off here! 
  • Next, add the chicken stock as well as the tomatoes to the pan.
  • Mix well and cook for another 15 minutes. Stir occasionally to make sure the soup doesn't catch on. 
  • Meanwhile, heat olive oil in another pan.
  • Once the olive oil is hot, add the garlic and basil to the pan and leave to infuse in the oil for 2 minutes.
  • Add the infused oil to the tomato base and again stir well
  • Then add the bread in chunks which will immediately thicken the soup.
  • Cook for 12-15 minutes, breaking up the bread into the soup by stirring with a whisk 
  • The final texture should still be quite coarse.
  • If you have followed all these steps, you will have a richly filled Tuscan tomato soup.
